      Editing … I'm eating mad healthy these days. Mainstays are peppers, tomatoes, onions, scallions, cucumbers, garlic and celery, and I enjoy all of them raw. Loooove potatoes but they aren't the healthiest. I dig peas and corn but they don't go with a lot of my meal choices lately. I like asparagus but it's expensive. Carrots are good but all the chewing gets tedious. If my partner makes broccoli I'll have some but I only like it boiled or steamed, and if I have to wait for water to boil it had better be for something tastier than broccoli. I was eating a lot of spinach for a while but I think I was just trying to force myself to like it and eventually more and more of it kept going to waste, so I think I'm done with it.

Then slices of cucumbers in-between – I guess, my preference are "Brotzeitgurken" or "Sandwichgurken", which are technically pre-sliced really big pickles ( I'm lazy so I buy them pre-sliced; https://src.discounto.de/pics/Angebote/2020-07/3627195/5938525_Kuehne-Sandwich-Gurken-330-g_original.jpg ). If you're feeling adventurous enough, you can also add slices of tomato and a salad leaf or two. Very juicy. I also pour lots of spices on top: pepper, salt, coriander, basil, oregano, ginger … whatever I have, usually.

I eat copious amounts of nuts, but none that are approved by that video (I eat plenty of almonds, but they have skin), so I'd have to convert to other kinds. Also, I hear pickles are slightly safer than cucumbers, so maybe that's a good wet ingredient to add to sandwiches in place of tomatoes. (Although, technically, I shouldn't be eating sandwiches period.)

      Editing … I think I'll give up fresh tomatoes. I don't use them for anything except to put in sandwiches. I always get beefsteak tomatoes which seem kind of expensive, and sometimes they spoil before I get a chance to use them. Cucumbers on the other hand, cheaper, last longer. While a jar of Heinz pickle chips cost me only 2.69. That's insane. It lasts forever on the fridge and the juice doubles a dressing I can sprinkle on bread to moisten it up a bit.

      Editing … P.S. Lectins are an actual thing it turns out. There just isn't much of a consensus of whether we should bother trying to avoid them. ALL foods contain lectins to varying degree, with most types of lectins considered to be harmless. That said, I'm still considering trying out a low lectin diet, although not very stringently. I'd just try to eat more: avocado, broccoli, mushroom, sweet potato, and maybe apples, and I'll switch from almonds to lectin free nuts. (which, incidentally, includes blanched almonds, since it's just the skin you have to avoid.) I figure this will probably be healthier for me anyway, even if lectins aren't the main reason. I also happen to love those foods a lot, so I'm actually excited to do this. P.P.S I grew up being fed potatoes for dinner every day, so I think those ought to be safe as well. Certainly my body would have developed an insensitivity to potato lectins in all that time.
