I found a browser extension called PocketTube and it allows you to sort your subscriptions into categories!

It's awesome, if I'm fancying a bit of boxing I just click the boxing folder and all my boxing channels are there. I spent ages sorting everything into categories, you can put stuff into multiple categories too, like say, educational and science or educational and documentary. Or all 3 if it fits.
